Baked sweet potatoes with quinoa

DESCRIPTION

I am not the biggest lover of sweet potatoes. I love them fried, but I don’t like to eat them boiled and that’s why I decided to try to create something that I could enjoy it and I came up with this recipe!

I hope you will enjoy it.

INGREDIENTS  for two people

  • 2/3 big sweet potatoes
  • 6 bigger cherry tomatoes
  • ¼ cup of black quinoa
  • ½ zucchini
  • Spinach (use as much as you like)
  • Dried tomatoes
  • 1 mozzarella
  • 1 red onion
  • 2 gloves of garlic
  • ½ lemon
  • Olive oil
  • Salt and pepper

INSTRUCTIONS

Cut the potatoes in half and put them on a baking sheet with a little bit of olive oil on both side. Make some holes with a fork in the potatoes, and then put  them into the oven. I put mines at 180 for about 20 to 30 minutes.

Cook the quinoa following the instructions and in a separatepan put the olive oil, the minced garlic and the red onion cut in littlepieces. Cook everything for a few minutes and then add the zucchini cut inlittle pieces. Add the cherry tomatoes with the dried tomatoes and cookeverything until the water from the tomatoes is gone and then add the spinach.Add also the salt, the pepper and the juice of the lemon and the mozzarella andmix everything until the mozzarella is melted. Add into the pan the quinoa andgive it another good mix.

Put the sweet potatoes on a plate and using a fork smash the potatoes a little bit, and mix it with the quinoa/tomatoes/spinach sauce. Add a little bit of lemon juice on top and enjoy it.
